How many variant is it possible ?

Hi, I would like to create a small shop for a client, she wrote bilingual books and she has 5 languages, so 4 variants, but I can just create 3, is it right ?

You are doing it wrong, your product have only 1 variant based on language and then indicate as many languages as you want!
So remove your variant settings and add just 1 variant: lang
And then add your langs couples -
