just tested an order an payment and noticed that I was not asked to enter the security code for my credit card!? Is this something that can and needs to be set in AppDrag of with Stripe?

Don't worry, Stripe SCA is setup on AppDrag. You won't be required 100% of the time 3D Secure, it's based on Stripe risk detection. When it's required, it will popup and follow the 3D secure workflow.
